QUICKLY-MADE CAKES.
Patty Cakos.—lngredients: Four ounces each of butter, sugar (castor), flour and cornflour, ono teaspoonful of baking powder, half a teaspoonful of salt, two eggs. Almond or lemon flavouring essence. Beat tho butter and sugar to a cream, add the eggs ono by ono, beating each iii well. Sieve tho flours, salt and baking powder, and stir lightly to the mixture, add tho flavouring essence. Put tho mixturo into greased patty pans and bake in a quick oven 10 to 15 minutes. Bachelor's Buttons.—lngredients: Five ounces flour, 3oz. each of butter and castor sugar, pinch of salt, half-teaspoonful baking powder, ono egg, flavouring essence. Cream the butter and sugar, beat in tho egg, then stir in the flour sieved with tho baking powder and salt; flavour to tasto. Shape into small rounds tho size of a walnut, roll in sugar, put on a greased tin and bake in a quick oven for about 10 minutes.
