THE PERFECT CUP OF TEA.
Making lea seems so simple that one can hardly think anyono needs instruction in' it. Yet there are rnanv houses where one does not get the real thing. Everyone knows that the teapot must bo heated with hot water first, then tho tea put in, followed by water that must bo actually at the boiling point. But after this the mistake is made of placing the pot on a cold surface. This chills the bottom layer of water, making it heavier, sn that it remains there, and there is no circulation. Hut, if tho pot is placed over a gas ring, with the flame turned down till scarcely visible, a circulation of the liquid Is kept up, and within about four minutes tho tea is ready as well as hot. If enough leaf has been used any dilnting can be dono in the cups and not by ndding water to the pot. ,To inako a single cup of tea, uso a flatbottomed mug. Fill it with the boiling water, put a saucer over it, and lot it stand over tho tiny flamo for four minutes,
