Sprinkle 2j tablespwnfn]? of semolina Into one pint cf boiling trtilk, add the grated rind of * twr> oranges, simmer gently until the semolina 3 clear and thick, 10 to 15 minute?: stir constantly. Bemove from the fire, add 2oz. cf sugar and the strained juice of three oranccs. cool, and tern into a glass di&b. When ccid cover with a gill of whipped cream sweetened and flavoured to taste, and garnish with crystallised orange sections.
