BUTTER DETERIORATION
RESULTS OF RESEARCH. IMPORTANT DISCOVERIES. (Received October 11. 8.15 p.m.) United Service. LONDON, Oct.. 11. Tt is understood that two tests recently concluded for the National Institute of Dairying Research at Shinfield by Dr. W. L. Davies, under tho auspices of the Empire 'Marketing Board, resulted in important discoveries which affect the Australian buffer industry. Dr. Davies' researches concerned oxidisation and potential fishiness occurring in butter iu transit, which last year cost the Australian producers at least £7OOO. In investigating the deterioration of Australian butter ho discovered that a very miriuto metallic substance in contact with the milk can damage an entire consignment of buffer and says immunity from fishiness which leads to eventual discolouring can only be ensured by the elimination of all possibility of such contamination. Dr. Davies further discovered a method of testing butter before export to make it possible to determine the period, almost to within a day, that buffer will carry without deterioration. This will onable perfect grading for export and also help iri deciding what butters should bo used solely for homo consumption.
