TARAMAKI EXPERIMENT,

DIFFERENTIAL PAYMENTS, "During last season the Whenuakura Dairy Company adopted a system of differential payments for milk for cheesemaking, based upon the results of regular microscopic grading of tho milk at tho Federation laboratory," Mr. P. 0. Veale, research chemist, has reported to tho Taranaki Federation of Co-operative Dairy Companies. "This innovation will be made the subject jf a special bulletin shortly, and accordingly I will report very littlo at present. Suffice it to say that there was a remarkable improvement effected in the quality of tho milk received at the factories, and a marked rise in the yield of cheese per lb of butter-fat, and in tho seasonal position of tho factory at tho grading port. The factory routine throughout tho whole season was characterised l>y remarkable ease and uniformity of working, -i considerably reduced requirement in starter, and a total absence of non-acid and other cheesemaker's troubles. This is especially notablo m view of tho fact that for a number of years Whonua kura had suffered seriously from chronic non-acid trouble at certain seasons of the year.
