MOCK ROAST CHICKEN.
Take for this delicious dish lib. butter beans, loz. butter, salt, pepper, 2 hardboiled eggs, 3£lb. forcemeat stuffiing, 2oz. butter for basting. Soak overnight the butter beans. Cook till tender. Pass through a sieve. Add the salt, pepper, and melted butter. Make half this beanpaste into the form of an oblong cake. Arrange the forcemeat on this, and the hard-boiled eggs cut in slices. Place the remainder of the bean-mixture on top, and mould all together. Glaze the whole over with beaten egg, plaee In a tin with the melted butter and bake § of an hour in a hot oven. Serve with brown gravy and bread sauce.
