MOCK ROAST CHICKEN.

Take for this delicious dish lib. butter beans, loz. butter, salt, pepper, 2 hardboiled eggs, 3£lb. forcemeat stuffiing, 2oz. butter for basting. Soak overnight the butter beans. Cook till tender. Pass through a sieve. Add the salt, pepper, and melted butter. Make half this beanpaste into the form of an oblong cake. Arrange the forcemeat on this, and the hard-boiled eggs cut in slices.
