HOT CROSS BUNS.

Ingredients. —21b. flour; loz yeast; £lb. sugar; £lb. lard; 2 eggs; ilb. currants; £ pint tepid milk; mixed spice (if liked); strips of pastry. Method.—-Put half. tho Hour into a warm basin. Cream the yeast and a teaspoonful of sugar together, add the warm milk. Pour this into the flour, and gradually mix into a smooth batter; leave to rise for an hour. Cleiyi tuo fruit, and rub the lard into the other pound of flour, add the remainder of sugar, also the currants and spice. Beat the eggs, and stir these into the risen batter,. Add also the other ingredients, and leave to rise again for an hour. Form the dough into buns, and place them on a bakingsheet. Allow to rise for about twenty minutes. Mark them each with a cross, and bake in a quick oven for twenty minutes.
