BANANAS IN BATTER.
Required: Three bananas, four ouact# of flour, half a pint of milk, ; two eggs, pinch of salt, half ounce of butter, castor sugar. Pnt the | flour and salt in a basin. Make a well > in the centre. Break into it. tho two eggs. Add two tablespoonfuls of the ; milk.. Stir this in smoothly, keeping it like a pool in tho centre. As the mixture thickens, add more milk, till half the milk has been used and all tho flour ii mixed in. Beat the batter well to introduce air into it; add the rest of the milk and let it stand for at least an hour for tho starch grains to swell and soften. Melt tlio bntter in a pie-dish, or Yorkshire pudding tin. Peel and cut each - banana into six pieces, cut in rounds, not lengthways. Place these in the dish. Pour over tho batter. Bako in a quick, oven till the batter is crisp and brown. Servo wholo in the dish, or slip it out and cut in pieces. In any case, sprinkle with castor sugar and serve at once or it tough and leathery. j
