STRAWBERRIES PRESERVED
To preserve! strawberries whole you re- ! quire 41b. oi preserving sugar, 41b. of I strawberries. Choose .-omul, ripe strawberries, hull and weigh them. Place them in layers on huge dishes, sprinkle with the sugar, and leave them all night. Next day grease a preserving pan with a little butler, and put the strawberries and sugar gently into it; bring them to the boil, shaking the pan occasionally to prevent the fruit burning. Puss a silver spoon gently round the edges from time to time, but care must be taken not to crush the fruit. Skim well, ,iud simmer for 15 minutes. Then drain the juice from the berries, and boil fairly far.t a one for 30 minutes. Pour the boiling juice on the fruit, return all to the pan, and boil j again for about 5 minutes, or until the juice, sets when tested. Put into drv. I clean jars."
