THE FOOD VALUE OF MILK.
SUPERIORITY OVER MEAT.
If we were to summarise the advantages of milk we would say (hat it contains food accessories called vitamincs, which are necessary to growth and maintenance; it contains proteins of a high quality and that arc easily digested by children; it contains mineral matter, especially lime, winch is needed for the growfh of children ; and it contains a fat which, having a low melting point, is easily digested. From the cost standpoint we soe that it is cheaper to buy energy for the body in the form of milk than it is to buy it in the form of meat. There is an old saying that "an apple a day will keep the doctor away." It would be equally true, or more so, to say that an ample supply of milk I b day would keep the, doctor away. The cow gives milk, which is better food than beef, and she is at least five times more efficient in the conversion of feeds into food than ; ,b the beef steer.
