DAIRY SCIENCE CLASS.

INSTRUCTION TO TEACHERS. A dairy science class for teachers was held in Hamilton during the week ended September 3. Mr. J. W. Hadfield, agricultural instructor for the Auckland Education Board, conducted class, which was attended by 25 teachers from various parts of the education district, for the purpose of qualifying to give instruction in dairy science in primary schools. The following summary shows the course of instruction — Lecture and Demonstration Work: Chemistry of milk; constituents; causes of variation; sampling milk; preserving agentsj the Babcock test; testing milk, cream, and skimmed milk; the specific gravity of milk, cream, and skimmed milk; detecting, skimming, and watering; hydrometer, lactometer, acidometer; specific gravity bottle; methods of determining specific gravity of solids and liquids; calibration of glassware; break-ing-down acid; pasteurising; estimation of acidity; herd-testing; testing for boracic acid and formalin. (Individual Work: Babcock test for butter-fat in milk, cream, skim milk, butter-milk, cheese, and butter; estimation of total solids in milk; ash in miht; water in butter; comparison of results from measuring and weighing cream; cream charts; separation of curd, albumen, and lactose; estimation of acidity; specific gravity of milk or other liquids or of solids. Other Tests : Morning and evening milk from (a) herd (b) single cow; first milk, mixed milk, and strip,pinga from the one cow; oolostrums ; cream and milk for ice cream; milk delivered by supplier (a) early (b) late in morning; comparison of the various preservatives.

Visits were J>aid to the Ruakura farm of instruction and also to two butter factories. This is the third dairy science class the Auckland Education Board has held in 1915 for teachers desirous of taking dairy science work as a subject of instruction in their schools. There are at present no fewer than 55 schools in the Auckland education district giving special instruction in dairy science, and the number will be much increased in 1916.
