Gervais cheese is a French variety, and one of the richest, partaking a little of the Stilton character, and also of a cream cheese in the matter of quality. It is made from fresh milk to which "is added one-half the volume of cream. It is estimated that two quarts of milk and one of cream will make a dozen cheeses.
