BONE TAINT IN BEEF.

A SUCCESSFUL REMEDY.

Ok considerable importance to New Zealand is the subject of bone taint in beef, for trouble has been experienced from one end of the Dominion to another through beef shipments landing at Home with the taint, which very considerably reduces the value of tho meat, and returns to the producer. Tho trouble has been particularly pronounced with North Island meat, and has been giving so much concern that Mr. John Clark, while on a visit to England, instituted inquiries into tho .subject. Mr. Clark secured an introduction to Mr. Hall, manager of Surfts, Ltd., who handle vast quantities of American boot'. Mr. Hall furnished him with full particulars of how tho meat is killed and frozen, or chilled, by the up-to-date American concorns, awl this information Mr. Clark sent forward bv mail to the Gisbome Sheep Farmers' frozen Moat Company. At a cost running into between £1500 and £2000, the company accepted and carried through the recommendations Mr. Clark was able to supply, and is now able to record that the new methods adopted have been attended with success. Considering that the export of beef from this district last year ran into close upon 10,000,0001b5. and for tho whole Dominion to over 62,000,0001b5, it will bo seen that, a remedy for bono taint, which must add appreciably to the. selling value of New Zealand beef and put in in greater demand, is of considerable importance to producers, and the country as a whole.
