CHRISTMAS HINTS.
Hrv your fruit and suet early. The prices increase as Christmas approaches. Large turkeys look nice, but they are not •so tender as the smaller birds. Remember this u hen choosing your turkey. The pudding is not so likely to stick to the basin if you allow it to stand about five minutes before turning it out to serve. Pleasing little Christ mas cakes can be made by beating together three teaspoonful?, of butter, three of sugar, three eggs, three cups of flour and a little nutmeg. The mixture should be rolled out and cut in small fancy shapes. Bake for about 10 minutes. Muscatel raisins give the pudding a rich colour and flavour. It is cheaper to buy these loose than in bunches. Be careful thoroughly to dry the currants for the mincemeat and pudding after washing them. If they are left damp they will cause heaviness. Here is a pretty decoration for the dessert, dishes. Place, some undamaged holly leaves near the fire to dry, but not so near that they will shrivel. When dry, dip them in oiled butter and sprinkle them with coarsely-powdered sugar and dry again. The leaves look pretty placed round the edges of dishes.
