THE DAIRY INDUSTRY.

The Industries Committee, though they have not yet presented their report to the House, have now practically decided on the recommendations they will make. The chief recommendation, as I mentioned some time ago, is that the Government should at once engage at least two dairy experts, preferably from Denmark. They also urge the establishment of Dairy Associations, for the mutual instruction of members, and for the advancement ot the industry, aid being granted to them from the consolidated revenue. The Committee further recommend the establishment of dairy factories. and the use of cream separators, shipment of butter as soon as possible after making, the reduction of railway freights to the lowest level, the use of special cool cars on the lines for carrying butter, the running of night trains where advisable, cool storage at port of shipment, and regular despatch of ships. On the question of packing, the committee recommend experiments to ascertain the bast woods, shape and size of packages, etc., for this purpose. So far tha evidence shows that the (JOlb keg is preferred in England, and that totara is the best New Zealand timber. The committee do not see their way to recommend " grading " butter, but if this course is adopted the work should be carried out in London by a qualified inspector. On the subject of cheese, the committee report that while the quality of cheese turned out from the best factories leaves nothing to be desired, yet speaking generally, there are great variations in quality, and this acts prejudicially on the sale of our cheese in the London market. The committee urge that better attention should be given to the subject, with the view of turning out a more uniform and high-class product. The report- concludes by referring to the practically unlimited market in England, and the high place which New Zealand, with her genial climate arid fertile soil, should take amongst the dairy countries of the world.
