INSPECTION OF DAIRIES.
TO THE EDITOR. Sis, — am sorry to see, in your issue of Saturday, that "some dairymen and farmers are not at all highly impressed with the appointment of an inspector of dairies." But could we not improve on the idea? "In Ireland," Mr. R. T. Auchmuty says, " the Royal Agricultural Society maintains a model perambulating dairy, which, mounted on wheels, is drawn from village to village, the inhabitants being invited to witness the most approved methods of making butter and managing a dairy." Would not this be better than mere inspection, or might not both teaching dairymen and farmers and inspecting factories go hand in hand ?—I am, &C., C. -
