It can be obtained at most of the lead* , in grocers in Auckland and Suburbs in seven pound I bags and upwards, and brown bread made from this _ meal from the leading bakers. Auckland. 1 „ Sir —At your request I obtained a sample of von Porridge Meal from your Mill on the 31st alt,,'and have examined it with the following results [ Analysis : 1 Moisture _ 12-55 Soluble Albuminoids Sugar, Gum, and Dextrines.. _ 515 1 Gluten .. M 7.53 Cellulose .. „ „ _ 2-58 Starch and Fat.. „ .. _70 30 Ash .. ... .. „ „ -94 This sample was produced entirely from wheat, and these results chow the preparation of a valuable article of food, from which a large proportion of the brm has been removed. The nitrogenous matter Is present to a greater iiegree than it would be in floor prepared ' from this wheat, while the retention of the germ in the meal adds greatly to its value as a flesh-piodncer, owin< to the arge amount of albuminoids thus retained. The ash is heavier than in ordinary wheat flours, and as this is chiefly composed of phosphate!, which are very important as bone-forming materials, it will be seen how beneficial this food will prove to children. lam of opinion that this preparation will prore of g eat value, but to ensure its easy -imitation by the system it will require care in cooking, and will need at least thirty minutes at aboili ing temperature to attain this result. I have &c-, J. X. POND, Colonial Analyst. Sussex-street, Newton, February 23,1887 Mb, John Lamb, • Dear Sir,—Eleven years ago I was injured, and hare U't been able to take solid food since.
