DAIRY PRODUCE.
TO, THE EDITOK.. Sib, —There is a great want in this city of some competent authority to weekly fix a price for dairy produce. The grocer's committee which discharged that duty a few years since, while it conferred a great boon upon the trade, did not please the producers, because they ware not represented on that committee. Could not the principal dairy, men, grocers, and butter carriers arrange » convenient time to meet weekly to fix this market price, or compel all produce to bs taken to tho building which was erected for the purpose of a market, but which is now used principally as a furniture warehouse, there to be classified and priced by some responsible competent authority. Tho present want of system is most unfair to producer, trader, and coriuumers. To producer, because, owing to the want of systematic distribution, some stores received excessive supply ; and thus, to protect themselves, have to keep, the price low. To the trader or retailer, because a very large number are unable to procure sufficient quantities of produce, butter especially, for their demand, and in order to endeavour to obtain a supply in several cases give 2d to 3d per lb. advance upon what nominally are the market quotations. To the cousumer, as then a uniform price would prevail, and the present cause of dissatisfaction would be removed. The need of some alteration is apparent. If some of the leading gentlemen representing the various phases of the question would unite to devise some plan of an equitable adjustment, it would be of great benefit, especially to the farmers, in whose prosperity none are more interested, or should bt>, than the residents of the cities, whose prosperity is so intimately connected with that of the country.—lam, &c, Coloxist.
