A good deal has appeared of late in the daily papers on this important subject, tho tendency of which is to cause every consumor of Milk to see that he gets a clean, pure, and unskimmed artlclc. Y© consider much that has been said was called for. "While it is correct that thero is plenty of room for improvement among milk vendors, we feel sure that it would be unjust to regard the milkman generally as an object of suspicion. We aro convinced thor® aro many who. whether they get paid or not for the milk they soil,* supply it pure, unskimmed, cleanly, and delivered twice a day. For our part,*we wish to state to our Customers and the Public what we, as milk vendors, guarauteo to do. We pledge ourselves: — I. To serve m\iv pure, sweet, and with all Us cream. 11. To bring it to town twice daily (Sundays excepted), and let the consumer have it fresh. 111. To sell no milk unless produced from welldrained farms and well fed and healthy cattle. We wish it to bo understood that only part of the milk we sell is produced by ourselves, the larger part Is from Epsom and Mangere districts, the milk from which has hitherto been made into butter. It ia worthy of notice that the cattle on these farms have been selected more for butter-making than milk-sell-ing, and hence as a rule give richer milk and less in quantity. Each farm from which we bring milk will be periodically inspected as to drainage and water supply for cattle. The terms on which we contract to buy milk from other producers aro that it shall be fresii, rur.r, sweet, and with all cream, and that all vessels used shall be thoroughly cleansed. Daring the warmest months of the year (from September to June) the whole of our milk will bo cooled over the Patent Milk Coolers, as used by tho Aylesbury Dairy Co., and Express Dairy Co., of London, tho two largest and most trustworthy Firms in England. By this means the milk keeps sweet, several hours longer during the trying weather. We submit tho milk we purchase or produce to Analysis at frequent intervals, and keep at the Hob-son-street Daliy for daily use, the cream gaugo and lactometer. Amongst our employes wc offer prizes for cleanliness and courtesy. : We have had ten vears' experience in conducting a large English Dairy business, subject to the " Inspection of Dairies Act," and although hundreds of samples have been taken by the appointed Inspector, have never been convicted of adulteration. Wo ask as a favour from the general Public, that if at any time they discover cause for dissatisfaction in the article supplied, or unpoliteness or uncleanliness on. the part of our employes, they will communicate to us promptly by Post-card or otherwise. As regards the purity of our milk, wo beg to state that any person who can convict us of selling watered mnir or of abstracting cream, we will pay the cost of analysis. In conclusion, we tako the liberty of saying, wo do not publish this so much as an advertisement, as from the knowledge that as the colonial law stands the trade generally is liable to bo rsgardod with suspicion.
