CoiiOURiNO fob Butter. —A French paper L'lnduetrie LaUeri, gives the mode of extracting the colouring matter from the marigold (Calendula officinalis). From the. flowers of this plant they have extracted, _ in an'Texpeneiye way, a colouring paste, which they name "mirliton." Thie they consider the best coloring matter for butter known, yet the old method of extracting rendered it too expensive. A new method is described as follows :—ln studying the construction of the petals of the j'marigold, I hit upon a method of extracting their colouring matter by a more simple, inexpensive, and. rapid .process. This consists in drying the flewers in the sun, or by the heat of a baiter's.oven, gently'bruising them, and preserving them in stoppered vessels. As thus desiccated the wateic is gotten rid of, and the protecting membranes open and crumble down to powder as they dry up. The colouring matter thus set free and deprived of its envelopes is open . to the action of fats, which readily dissolve it. In, ehort, by this simple process we obtain a colouring substance occupying less space than mirliton, devoid of taste or smell, far more concentrated; and much cheaper. - Notice is given in our advertisement columns when the Auckland and out pensioners are to receive their quarterly payment.
