TESTED RECIPES. PINEAPPLE CREAM FILLING. Two tablespoons beaten cream, 6 drops essence of pineapple, I tablespoon finely chopped tinned pineapple Beat cream, mix with tinned pineapple and essence. SHAM BRIDE’S CAKE. 241 b butter, 341 b sugar, %lb treacle, currants, peel, 15^lbs flour, 6 eggs, I teaspoon soda, pinch of salt. Mix as ordi" nary cake and bake slowly. FRENCH TEA BISCUITS. 6ozs flour, 3ozs butter, 3ozs sugar, essence of lemon, 2 eggs, I cup icing sugar. Rub butter into flour and sugar. Mix into it I egg and a few drops of essence. Roll out and cut into fancy shapes. On each, spread icing made from I white of egg and enough icing sugar to make into a fairly stiff paste. Bake in a fairly slow oven taking great care not to let icing get too brown. RHUBARB AND DRIED APRICOT JAM. Four pounds of rhubarb, halfpound dried apricots, five pounds of sugar. Cut up the four pounds of rhubarb into cubes. Put it with four pounds of crystallised sugar into a basin and let it steep for 48 hours. Steep the apricots with two breakfastcups of water also for 48 hours. Now put the rhubarb and sugar into the preserving pan and add the apricots with an extra two and a half breakfastcups of sugar.
