EASY to prepare, still easier to consume and delightfully cooling to the palate are to-day’s porch luncheons. Using this simple salad-sandwich-and-beverage pattern you can plan all kinds of tempting porch luncheons. Serve them for your bridge pai'ty or for your family’s supper on a sulti'y day. Here are recipes for making salad, sandwiches and perfect iced coffee shown in to-day’s photograph: TOMATO SURPRISE For each salad allow 1 firm wellshaped tomato, 1-3 cup cheese and about h teaspoon minced chives. Toast the tomatoes quickly over a flame or dip in boiling water to loosen the skins. Peel and chill. Now with a sharp knife make 3 cuts lengthwise of the tomatoes. Fill the tomatoes with a mixture of cheese with minced chives and salt and pepper to season. Place salted almonds between the slits in the tomatoes and use as a garnish. Add French dressing. ICED COFFEE Make this by pouring the hot, freshly made, double-strength coffee over ice.

Don’t use leftover or reheated coffee. Make coffee double strength by using 4 level tablespoons coffee to each measuring cup of water and pour immediately over ice cubes in tall glasses. Serve with sugar and cream, the latter plain or whipped. If you are making iced coffee for a large group and must make it up ahead of time, you can retain much of the fresh flavour and fragrance if you make your coffee as usual and, as soon as it is brewed, pour it into an ice cream freezer and close the lid tightly. Pack in ice and salt and keep covered until ready to use. To serve, add ice and pass cream and sugar. The rapid cooling preserves the flavour. DAINTY SANDWICHES Date-nut bread. Slice it thin, put the rounds together with cream cheese, peanut butter or jelly, cut in fancy shapes and serve. Crinkly edged cutters make pretty shapes and the traditional trump and half-moon cutters give a party touch. For thin white bread sandwiches use a filling of finely minced watercress, thin-sliced cucumber, marinated in French dressing or minced radishes.
