PEPPERMINT DROPS You will require one pound ot lump .sugar and half a leacupl'ul of cold water. Put both together into a saucepan and luintt to boiling point when the sugar has melted. Jjoil slowly for about one hour, or until a little of the syrup tried in cold water hardens at once and is brittle. Remove the pan from the lire, quickly stir in a little peppermint essence, and pour the mixlure on to large buttered dish, or a marble slab. When eool enough to touch, cut it into strips willi a knife, then cut each strips into little squares with scissors, and leave to set.
