A. COURSE OF COOKIN'U FOR SINGLE FOLK

A course of lessons in cookery for single men and women is something quite new in polvtu<.'linic work (says the Morning Lost), it. is being instituted for the benefit of young men and women of very small incomes who*are living in one or two rooms, and with little knowledge of how they can cater for themselves. The Department of Hygiene and Public Health will give, instruction in the preparation oi simple appetising and nourishing meals at little cost and laborn*. Many young people, especially girls, break down in health because they do not know how to feed themselves, properly. They have in their rooms few conveniences for cooking, and are too frequently content with tinned food or the übiquitous boiled egg. It- is the object of this course to show how appetising meals can he cooked on a single gas ring or a small iron glove. The syllahus° will bo an explanation of the necessity for mixed and well-balanced diets, with emphasis on the importance of well-planned and well-cooked meals, it indigestion and ill-health are to he avoided. The preparation of inexpensive dishes will he taught with regard to economy of fuel and utensils, digestibility, variety, and daintiness. How a meal may he cooked for three farthings will he‘explained.
