Herbert stated that there was, for what was called aesthetic reasons, too great a tendency to tamper with oatmeal, one of the most healthy foods. “If we refined the food of a horse the way we are doing our own it would soon get so weak it would be unable to pull a wheelbarrow," he remarked. “We take out of our oatmeal much that is good and health-giving, and pour down the throats of our children a sticky mess that would clog a drainpipe. The treatment of our flour is just as injurious. A better appreciation of food values and food preparation would indeed do much to prevent disease."— Post.
