HOREHOUND CANDY.
HOW AN OLD-FASHIONED REMEDY IS EASILY MADE. - '
To make this very useful candy tako the following ingredients3ld. - of brown sugar, 4 ounces of treacle, and 1 pint of horehound extract, which can bo made as follows: Procure from any herbalist twopennyworth of horehound herb, to,which add one and a half pints of water; put* it in a pan; and let it simmer until it is reduced to a pint. Now put the sugar and treacle into, a saucepan (which must be quite clean) with the horehound extract already made, and put it over a good, bright fire and stir it until it is dissolved. Next cover it with a lid for about s'miniites, then remove the lid and continue boiling it for another 10 minutes; then take it off the fire, and then with a flat wooden spatula or wooden spoon rub portions .'of the syrup against the sides of the pttti until the syrup thickens and has . a creamy appearance, then give the wholo a good stir and pour it out into a wellgreased tin, and when it is nearly cold mark it into small squares with a knife, and break it up when cold. The cubes can then be wrapped in wax paper.
