Duck Eggs Should Always Be Cooked
(Spec.) WELLINGTON, This Day. The danger of eating duck eggs which have not been thoroughly cocked, or prepared foods made with raw duck eggs, has been emphasised by an officer ol’ the public hygiene section of the Health Department. The caution was issued following the investigation of a case of poisoning in Auckland, where the cause of the trouble was thought to be Spanish cream. It was found that in mixing the Spanish eream the gelatine ingredients had been beaten up with the white of an infected duck egg. It was discovered that a small percentage of duck eggs w r ere infected with a dangerous disease to which many people were easily susceptible. Thorough cooking of duck eggs killed the germ of the disease and made them safe for eating.
