PASSING OF THE TOUGH JOINT

There need be no more tough joints as the-outcome of a discovery by the Lew Temperature Research Station at Cambridge, which found 1 , {that meat can be boiled or stewed three times more quickly if a pinch of phosphate is added to the pot. This breaks down the collogen which gives beet and rhutten their toughness. The discovery should be Of great value to the poor classes, especially by the saving of gas that slow cooking involves, phosphate does not affect the flavour or food value of the meat.
