COCOANUT TEA CAKES.

Quarter of a pound of self-raising flour, 2oz of cornflour, 2oz of dessicated coeoanut, 2 eggs, 3oz of castor sugar, J a teaspoonful of vanilla, 2oz of butter. Rub the butter into the flour, add the cornflour and mix well, stir in the sugar, coeoanut and vanilla. Mix to a dough with beaten eggs, reserving a little for tops of the cakes. Roll out on floured board and cut into shapes with a. tin cutter, or form into little round cakes, using a little flour to prevent stickiness. Place on a buttered tin, brush over with beaten egg and bake fifteen minutes in a moderate oven.
