0 Melt £ ox. butter and fry * small fine-chopped onion until golden brown; stir in teaspoonful each of curry powder and flour, and continue to cook for a few minutes. Add i pint stock or gravy, one tea3poonful of Lea & Perrins’ Sauce, and small chopped apple. Simmer ten minutes. Chop up two hard boiled eggs, reserving four or slices as garnish, and add to curry sauce. Reheat, but do not allow sauce to boil after eggs have been added. Serve with border of rice. 73
