What Can be Done With Cheese

Cheese and Egg Croquettes. —»Stir $ cupful grated cheese into a cupful of hot, thick white sauce. Continue to stir until the cheese is melted. Remove from tho live and add a cupful of the sarno kind of grated cheese and one hard-boiled egg chopped very finely. Let tho mixture stand in. a cold place overnight. When ready to cook them, form into croquettes, roll in line breadcrumbs, dip in beaten egg, and then roll again in breadcrumbs. Fry in deep fat until brown. These can be served as a savoury, or for supper, or for lunch with cold meat. Cheese Pancakes. —Prepare a thin pancake batter and set aside for .If hours. Stir in three tablcspoonsful of grated cheese and fry the mixture in hot fat, making sure that each pancake is quite thin. Sprinkle with a little grated cheese and roll up and serve very hot. Cheese Straws. —Rub 2oz of butter into 3oz of flour. Add 2oz of grated cheese and a little salt and cayenne. Make into a firm paste with the yolk of an egg and a littlo water. Roll out thinly and cut into straws. Make a few of the longer strips into rings and bake with the straws in a moderate oven until they arc a golden brown. Macaroni Cheese.—Boil some macaroni in milk. When it is tender strain off the milk and thicken it with a little flour, and a small lump of butter and some grated cheese. Put the macaroni into a pic-dish, pour over the sauce, sprinkle tho top with cheese and bake in tho oven until the top .is browned. Cheese Custard. —Grato .finely Mb of stale cheese, and mix at with the same amount of finely-grated stale breadcrumbs. Add pepper- and salt and ns much made mustard as you think right. Mix these together very thoroughly. Stir in two brcakfastcupsful of boiling milk. Then stir in a wcll-bcatcn egg. Pour into a baking dish and bake in a fairlv hot oven.
