Cheese and Egg Croquettes. —»Stir $ cupful grated cheese into a cupful of hot, thick white sauce. Continue to stir until the cheese is melted. Remove from tho live and add a cupful of the sarno kind of grated cheese and one hard-boiled egg chopped very finely. Let tho mixture stand in. a cold place overnight. When ready to cook them, form into croquettes, roll in line breadcrumbs, dip in beaten egg, and then roll again in breadcrumbs. Fry in deep fat until brown. These can be served as a savoury, or for supper, or for lunch with cold meat. Cheese Pancakes. —Prepare a thin pancake batter and set aside for .If hours. Cheese Custard. —Grato .finely Mb of stale cheese, and mix at with the same amount of finely-grated stale breadcrumbs. Add pepper- and salt and ns much made mustard as you think right. Mix these together very thoroughly. Stir in two brcakfastcupsful of boiling milk. Then stir in a wcll-bcatcn egg. Pour into a baking dish and bake in a fairlv hot oven.
