To-day’s Recipe
TOMATO SOUr Use your ripe tomatoes for soup. Put a quantity in a large saucepan nearly filled with cold water and fioil all for about an hour. Then stir all through a sieve or colander to remove the skins. Keep all the pulp and strained liquid, and put on again to heat, adding a good cup of finely-chopped parsley. Then thicken with 3 tablespoons of flour mixed smooth with cold water. Add salt and pepper to taste. The soup should be as thick as cream. Just before serving the soup stir in one pint of milk. Stir, but do not re-boil. This is a very good recipe for tomato soup.
