ONION AND CELERY SOUP Half a cupful of chopped onion, half a cupful of chopped celery, three cupsful cf water, one tablosoon of butter, one tablespoon flour, one teaspoon of salt, pepper to taste. Milk or cream as ncedod. Cook the prepared onion and celery slowly in the water until tender. This will take fuly an hour. Then run through a wire sieve, and return to tho soup pot, adding the seasoning; rub the butter smooth with the flour, pour on some of the hot soup; when quite blended return to the pot and boil up well. Now add sufficient milk or fresh cream until it is of the desired consistency. It should l>c just creamy, but not thick. Serve with pulled bread.
