CHIP ARTICHOKES
Choose largo artichokes, pool and cut them in very thin slices, aucl let them lie for a short time in cold water to which a few drops of v.inegar or lemon juico have been added. Then drain tho chips and dry them thoroughly in a clean cloth. Fry a few of them at a time in deep fat until brown and crisp. Drain on white paper and sprinklo with salt.
