Monthly Report It lias beeQ ascertained] that a eonsiderable decline in quality of cream has been caused by suppliers not washing and sterilising their cans on the farms, states the .monthly managerial report of the Cheltenham Dairy Company. It. has been taken for granted by many, that because a can washing machine is operating at the factory the cans arc in a fit condition for the storage of cream. This is not so. While the machine does excellent work in cleaning the cans for return to farms, such cans must again be thoroughly cleansed and scalded before being used for cream. After scalding, do not use any cold rinsing water, as cans will dry more rapidly in a heated condition and will be less liable to be contaminated after the sterilising has been done.

It has been found necessary to bring this matter before the notice of suppliers, as neglect to wash and sterilise the cans has a detrimental effect on the quality of the cream, and it is hoped that earnest attention will be given to the request. The monthly meeting of directors was held on January 14, when it was decided to advance Is sfd against .the December supplies of butterfat, which is the same rate as the previous month’s advance . payment. Reports from London on the butter market are exceedingly encouraging and present piospects appear to be good. This, is due to the rapid decline in Australian gradings, where the dry weather has materially affected production. Consequently, heavy inter-State baying has been the result aud has almost eliraHnaled the export trade. The reports also state that the Londou stocks are light aud that the Continent is beyiug more heavily lian usual.

The manager’s report on the manufacture is as follows:—Butter made December 1928, 285 tons; 1927, 268 tons; increase, 17 tons. Butter made for six months ended December 31, 1925, 112 S tons; 1927, 959 tons; increase, 139 tons.
