ROAST STEAK WITH PUDDING PUFFS..
Buy 21b. juicy beefsteak cut in one slice about J-inch thick. Prepare a seasoning as follows: One cup fine bread crumbs and one tablespoon butter or dripping; add a pinch of herbs, pepper and salt to taste and one small onion finely minced, mixing together with a little milk. Lay the steak out flat, spread the seasoning on it, , roll up, secure with a skewer and string, dust over it a little flour, spread a slice of bacon on top and sprinkle half ; teaspoon sugar, over the steak. (The sugar imports a delicious flavour, and ensures a good crown gravy.) Place in a, bakingdish with plenty of dripping and bake, for about -an hour. Baste often. About 20 minutes before it is cooked pour into the baking-dish tablespoonfuls of the following Yorkshire pudding, leaving little spaces between:Beat one egg thoroughly, add half pint milk, stir in ilb. flour, and one pinch of baking powder. When cooked, place meat on a dish with Yorkshire puffs around it and garnish with a few sprigs of parsley. Serve with brown gravy.
