CREAM OF ONION SOUP. Slice thinly 5 medium-sized onions, and put into a saucepan with 2 cups water; bring to the boil and simmer gently for 2 hours (the liquid must not be allowed to boil away). Put a colander over another pot or basin, pour the soup in and rub all the onion through with a wooden spoon (this will take some time, hut is % worth the trouble). Into the first saucepan put 1 tablespoon butter and 1 dessertspoon flour, stir and heat gently; then add the onion puree and 1 cup milk; bring to'the boil and simmer for 5 or 10 minutes. Just before serving stir in 1 egg-yolk beaten -with 1 dessertspoon milk. Let it thicken but do not allow to boil. Add salt and pepper to taste.
