SNOW APPLES
“I am sure you would like to make snow apples, children,” said Wendy ‘‘So we will have some for supper.’’' “Take two nice large cooking ap pies, peel and core them, and plac( them in a fireproof dish. Fill the centres with sugar, put’ a little lemon juice on this, and pour one tablespoonful of water round the apples to prevent them fiom burning. Now bake them till -,y are quite soft. “ ‘Snow’ is made of, the - white of one egg into which ybu must beat, with an egg whisk, about one dessertspoonful of castor sugar. When this is quite stiff, cover each apple with the meringue, and put the dish back in the oven for about two minutes, for the meringue to set. “Snow apples should be served hot, and the meringue should puff up and look like a little mountain.”
