One detrimental characteristic of Australian butter is its extremely solid texture, which makes it difficult to spread, and thus unacceptable for the restaurant and domestic trader; but it is acceptable to blenders. A further difficulty Is that Queensland butter is only available on the British market for six months In the year, and therefore it is useless for any British house to sepcialise in it while New Zealand butter is available for a longer period.
