PICKLES.

There is now in tbe South Island a representative of a US. firm which manufactures all sorts of pickles, preserved fruits and food products, fittyseven different vari- ties altogether, including soups and condiments. Over 22,000 acres of land are placed in cultivation, and tbe company propagates its own seed and plants it in localities when soil and climate produce the best flavoured fruits and vegetables. An enormous establishment is maintained, in connection with which are a theatie, lunch rooni9, pleasure gardens, etc., for the benefit of the 22,000 hands employed.
