A little citric acid added to jams will prevent them from going sugary, and will make them jell more readily. This applies especially to melon jam. I
A tablespoonful of cold water and a generous dash of salt added to rice when it is halfcookcd- will senarate the grains and make them firm. !
If doubtful about the quality of mushrooms, test them by stirring with a silver snoon when cooking. If the spoon becom-s discoloured they are poisonous.
