’ APPLE AMBER PUDDING. (■ ' Take 6 large apples, 3oz brown sugar, 2oz butter, 3 eggs, 1 lemon, i cherries, strips of angelica, short , paste, castor sugar. Line the edge of a pie-dish with - thin strips of paste about three inches - wide, and decorate the edge with l overlapping leaves or small rounds ’ of pastry, which must be securely fixed ; with white of egg. Peel and slice theapples, stew them gently with the but- ; ter, sugar, and lemon rind until ten- . der, then pass them through a sieve : and add. the egg-yolks. Pour the mixi ture into the prepared piedish, bake gently for twenty minutes, then pile the stiffly-whipped egg-wliites on the top. Dredge liberally with castor sugar, decorate with cherries and angelica, and replace in the oven until the meringue hardens and acquires a little colour. Serve hot or cold.
