STEWED SPAGHETTI PUDDING. Take H pints milk, 2 eggs. 1 small lemon (rind only), 2oz sugar, 3oz spaghetti, ioz butter or margarine, jam or stewed fruit. Break the spaghetti into very small pieces and was'h it. Put it into a saucepan with the milk and cook gently until soft and the mixture quite thick, keeping it stirred occasionally. Draw aside, add the grated lemon rind, butter and sugar. Separate one of the eggs. Beat the whole egg and yolk together and stir into the mixture when slightly cooled. Whisk the egg-white to a stiff froth and fold in lightly. Turn into a greased basin, cover securely with a well-greased paper and steam for* one hour and a half, lurn out and serve with jam or stewed fruit.
