You can prevent fat from spluttering when frying by sprinkling a little salt into the frying-pan before putting id the fat.
Remove the rind before frying bacon It will cook more evenly and will not be so liable to curl. While rancid blitter is not detectable in cakes, it should - never be used for frying as it will be detected immediately. Food that is to : be fried will .inevitably taste greasy unless it is put into fat that is sufficiently hot. To be sure of correct heat, wait until all bubbling ceases and a faint blug smoke arises before putting anything into the frying-pan. Potatoes or fish should be thoroughly dried before placing in a frying-pan. This will avoid the splutter and possibility of fire which might arise if fish or potatoes were put in while wet. Meat, fish and rissoles, if not given a coating of batter, should be dipped in flour or dried ground breadcrumbs before frying. Oil is better than fat for frying most kinds of fish. •
