A RECIPE.

APPLE TARTLETS. Melt a tablespoonful of butter in a pan and add half a pound of thinly sliced cooking apples, two or three tablespoonfuls of sugar, the grated rind of a lemon, and the juice of half of it. Cook slowly and carefully until the apples are soft, then rub through a sieve. Stir in a tablespoonful of fine cake crumbs from any stale, plain cake or sponge cake, and beat in the yolk of an egg. Lastly, fold in lightly the white of the egg whisked to a stiff froth. Line some patty tins with short pastry rolled out thinly, and decorate the edges. Put in the apple mixture, taking care not to fill them. Bake in a fairly hot oven for about twenty minutes or until the pastry is cooked.
