Danish, 112 s; choicest salted New Zealand, 108 s to 109 s; Australian, 100 s to 101 s; unsalted, New Zealand, 106 s to 109 s; Australian, 103 s to 107 s. Cheese is slow. New Zealand coloured, 58s, white, 61s to 625; Australian, coloured, 56s to 575; white, 60s.
