Is milk in the cow's udder ever free from bacteria ?—No. 2. Is aeration or cooling any security for the destruction of bacteria in milk ? —No. 3. Is pasteurisation of milk at a temperature of 155 Fahrenheit for 20 minutes, with a chilling to below 40 Fahrenheit any security for the destruc tion of bacteria?— Yes, 4. Is the albumen in the milk coagulated, or has the digestibility or food value of the milk been adversely affected by such a process ?—No. 5. Are the animal and other bad flavors removed from the milk by such a process ?—Yes. 6. Is it advisable in New Zealand to pasteurise milk for human consumption ?—Yes, decidedly. Of course most people in N.Z. know the great value of pasteurised milk as supplied in all the chief towns, but samples will be supplied free on application.
