The most up-to-date plant has been erected in Te Awe Awe-street for the cleansing and purifying of the milk, which will be carefully tested and guaranteed unadulterated. Pasteurisation of milk is simply a heating; and chilling process which is now made compulsory in most cities of the world in the interests of the public health, and must not be confused with milk treated by any other process, such as eerating, etc., which in no way can be a guarantee for the destruction of disease bacteria for which milk constitutes such an ideal medium. Inspection invited Telephone 240. Medical men of Palmerston North, interviewed about the pasteurisation of milk, gave the following answers :— 1. Is milk in the cow's udder ever free from bacteria P—No. 2. aeration or cooling any security for the destruction of bacteria in milk ? —No. 3. Is pasteurisation of milk at a temperature of 155 Fahrenheit for 20 minutes with a chilling to below 40 Fahrenheit any security for the destruction of bacteria ? —Yes. 4. Is the albumen in the milk coagulated, or has the digestibility or food value oE the milk been adversely affected by such a process ?—No. 5. Aretheammaland other bad flavors removed from the milk by such a process ?—Yes. 6. Is it advisable in New Zealand to pasteurise milk for human consumption?— Yes, decidedly. Of course most people in N.Z. know the great value of pasteurised milk as supplied in all the chief towns, but samples will be supplied free on application.
