THE BACON-CURING INDUSTRY.

A STARTLING ANNOUNCEMENT. DISEASED PORK EXPOSED FOR SALE. [PBEHS ASSOCIATION. 1 WELLINGIX3N, June 7. "Mr Moore's accusations about the meat supply of the city are causing a mild sensation. Mr Dimock, manager of a large local bacon-curing factory,; states that in only three out of the 47 curing business factories in the colony is slaughtering conducted under Government supervision. He did not believe any of the charges of corrupt dealings against the Government inspectors. Speaking of our trade, he said that care had to be taken in what was exported, but "the greatest rubbish in the world could be sold in New Zealand." He knew of several factories in this Island where there was no inspection. Some of these were in Taranaki, which he alleges is the worst district in the colony for tuberculosis in pigs. The disease was twice as prevalent a,mongst swine as amongst cattle. He urged that all pigs killed should be under the supervision of Goveinment inspectors. As to the allegation that diseased pork was sold in the local market, he had seen only recently twelve carcases exposed for sale, two of which he noted were badly infected with tuberculosis. His experience of Government inspection was that it was thorough and effective, and it was to be regretted that all meat for human consumption was not so inspected.
