The great feature that makes a baking powder valuable is its leavening capacity. An easy way to test the leavening capacity of baking powders is to place in a row as many glass tumblers as you have baking powders to test. Half fill the tumblers with water and put one teaspoonful of baking powder in each. Then place the tumblers between yourself and tlie light and watch the action of each.
